A Fancy Story

Fancy Ranch is a playful, pop-up from the team behind Shilling Canning Company, opening this July at Union Market in Washington, DC. It’s our love letter to the fried chicken that’s been a best-seller on the Shilling menu for the past five years — made more accessible, more fun, and ready to bring a little levity (and a lot of crunch) to your day.

The concept was dreamed up by two dads — Chef Reid Shilling and industry veteran Sheamus Feeley — out of a shared love for crispy fried chicken, good ingredients, and family-style meals that bring people together. But Fancy Ranch is proudly 100% woman-owned by Sara Quinteros, a James Beard Women’s Entrepreneurial Leadership alum and co-founder of Shilling Canning Company, who brings this idea to life with heart, humor, and a deep commitment to community.

While Shilling has offered a deeply rewarding (and occasionally serious) fine dining journey, this new venture is a chance to let loose, connect more directly with guests, and serve great food at great value — all in a fun, casual setting.

The menu is anchored by whole Amish chickens sourced from family-owned farms, supporting local agriculture and offering guests a fuller, more flavorful experience — from thigh to breast to leg to wing. Expect crispy fried chicken, a cornbread waffle spin on our famous Shilling hoe cake (topped with maple butter, of course), and sides like Aji Verde potato salad and classic slaw. And don’t sleep on the sauces: Fancy Ranch (because even the fanciest among us love ranch), hot honey, honey mustard, aji verde, and traditional hot sauce.
